Cookware pans either get heated directly by a flame or heating element beneath them, or they must generate their own heat from a magnetic field. On an induction cooktop, your pans become the heating element, so the material has to cooperate. On a gas or smooth-top electric range, the heat comes from below, so flat, stable pans that sit evenly over the burner matter more. A pan that performs beautifully on one stove can fail completely on another, which is why the right choice always starts with knowing your cooktop.
Why Induction Cooktops Are The Pickiest
Induction cooktops use an electromagnetic field that heats the pan itself, not the glass surface. That makes them fast and efficient, but it also means your cookware must be ferromagnetic—the magnet test settles it. Place a magnet on the pan’s base; if it sticks firmly, the pan should work.
Whirlpool’s official guidance says to use enameled steel, cast iron, or stainless steel designed for induction cooking. The materials that don’t work are glass, ceramic, copper, and aluminum, since none of them interact with the magnetic field.
One caution: some pans are sold as “induction compatible” when they aren’t reliably so. Check for a stamped coiled spring symbol on the base, then confirm with the magnet test. A weak stick usually means weak performance.
What Works On Gas And Smoothtop Ranges
Gas and smooth-top electric ranges are far more forgiving than induction when it comes to material. On a gas stove, the flame heats the pan from below, so almost any material works, including aluminum and copper. What matters is a flat, stable base that sits evenly over the burner; a warped or rounded bottom creates hot spots and wasted heat.
Smooth-top electric and glass-ceramic cooktops are stricter. Flat-bottomed pans that haven’t warped are essential—a curved base will wobble, scratch the surface, and heat unevenly. If you’re buying new pans for a smoothtop, press them down and check for gaps; a flat bottom is non-negotiable. Stainless steel, cast iron, and enameled cast iron all work well, as long as the base is smooth and even.
Induction is the only stove type that requires magnetic materials, so if you have a gas or smoothtop, the material list opens up significantly. That said, a flat bottom is good practice on every stove type, not just smoothtops.
Match Pan Size To Element Size For Even Cooking
This step is easy to skip but makes a measurable difference in how evenly your food cooks. On an induction cooktop, the pan should be at least 5 inches across the bottom, and it should match the element’s size. A pan that’s too small for the element will heat unevenly, while a too-large pan wastes energy and creates hot edges.
On gas and smoothtop ranges, the same logic applies: a small pan on a large burner means wasted heat around the edges, and a large pan on a small burner means slow, uneven heating in the center. Matching the pan to the burner isn’t about precision though—it’s about staying within the sensible range where the pan’s base roughly covers the element or flame. This is the single easiest adjustment you can make to improve cooking consistency.
